Three ingredients of Meringue


Meringue is a mixture of egg whites and sugar which when mixed and shaken well will form a thick and creamy solution. Meringue can be used as a topping for pies, to mix ingredients to make cakes to decorate cakes.

1. Egg white

Use fresh egg whites. Because the key to the formation of a good meringue texture is the stiff texture formed by denaturation (breakdown of protein) in the egg white. If the egg whites are cold (refrigerator temperature), first separate the egg whites from the yolks. Then, rest for 30 minutes before processing.

2. Sugar

Powdered or granulated sugar can both be used. No need to be afraid of failure because each has advantages. Powdered sugar is easier to mix into the dough and contains cornstarch which you can count on to make the dough more stable. Meanwhile, granulated sugar is richer in taste. You can also use brown sugar to give the meringue a caramel aroma.

3. Cream of Tartar

Useful as a stabilizer (stabilizer). Put in a small amount into the dough. Not only to maintain the consistency of the dough but also to increase the volume of the beaten egg whites.
